Growing up we only had egg salad sandwiches once a year, and that was obviously after the Easter Bunny dumped a ridiculous amount of hard-boiled eggs into our home. Don't get me wrong, they are delicious. They just aren't something I really crave on the daily. It probably has something to do with the fact that I don't eat a lot of bread and don't dig most mayos out there. But - I discovered these egg salad sandwiches can have a healthy makeover and be quite delicious and refreshing. I'm talking mixing those natural pasture raised eggs with some paleo and whole 30 friendly mayo, fresh radishes and green onions and wrapping it in Kale: a cleaned up and simple 5 ingredient Egg Salad Kale Wraps.
I love the cleaned up version with Tessamae's mayo- one of the few things I still buy store-bought. I'm still planning to learn how to make my own mayo one day, and then it will be aoli everything. But for now Tessamae's is the second best! And the Chesapeake version is full of delicious flavor and spices.
I love the wonderful colors of deep red and green in the kale wrap that complement the bright spring colors of the green onions and red radishes. Plus Kale is super good for you. And these radishes are actually called Easter radishes. How fitting.
--Simple 5 Ingredient Egg Salad Kale Wraps Recipe--
Ingredients:
- red kale leaves, 2-4
- eggs, hard-boiled, 4
- mayo, 2 tbsp, I used Tessemae's all natural Chesapeake mayo
- easter radishes, 2
- green onion, 1
Directions:
- coarsely chop hard boiled eggs in a bowl using a fork
- dice radishes and green onions.
- add to bowl with mayo. Mix with fork
- rinse and dry red kale leaves
- scoop egg salad mix into kale leaves
- garnish with extra radish and green onion
- serve and enjoy!
