Serves 2
Ingredients:
- tomato, 1
- peach, 1
- mint, 1 handful fresh
- cucumber, 3 1/4" slices
- EVOO, drizzle
- salt & pepper, to taste
Directions:
- slice the peach and tomato into 1/2-1" slices
- stack peach, cuke, tomato, peach, cuke, tomato
- drizzle with oil and salt and pepper. garnish with fresh mint leaves
- serve and enjoy!
