1cupcelery pulp from juicingthe pulp typically has large pieces of celery that give texture and shape to the fritters.
1/2cupcoarsely chopped fresh parsley
1large egg
1/4tspsalt
1/2tsppepper
Coconut oilabout 3 tbsp, enough to evenly coat bottom of pan and cover 1/3 of fritters
Instructions
Heat coconut oil on medium high
Mix all other ingredients together in bowl and form into patties
Place patties gently into heated coconut oil and fry for 2 minutes or until golden brown
Gingerly flip, using spatula(s), and let fry another minute or two
Remove to a paper towel
Serve and enjoy!

The amount of oil you need will depend on the size of your pan. make sure the pan is evenly coated with oil about 1/8 inch deep. This recipe can easily be doubled or tripled to use the amount of pulp you have. You can store celery pulp in the fridge for several days before using it to make these fritters. You could use this recipe with any veggie you juice. Just make sure to grab the veggie and herb pulp before you start adding in fruits in. Some other veggies that would work well are carrot, beet, and kale. ⠀
