Almond coconut date bombs are a sweet treat that's high protein, high fat, and low carb. Great for the 3pm slump to keep you nourished, balance blood sugars and regulate your hunger signals.

Ingredients

  • 14-16 pitted dates slit open hot dog style
  • 1 tbsp almond butter can add an extra 1/2 tbsp almond butter if desired.
  • 1 tbsp almond flour
  • 1 tbsp coconut flakes unsweetened, crushed
  • 1/2 tsp coconut butter

Instructions

  • slice the dates long-wise or hot dog style so they are ready for stuffing
  • mix all other ingredients together in a bowl.
  • spoon the filling into the dates, making stuffed dates.
  • serve and enjoy

Notes

These will keep in the fridge for a few weeks, ready for you when hunger strikes.
